Volpe Pasini's Merlot 'Togliano' is a Friulian wine, produced precisely in Togliano di Torreano. The winery's history dates back to the 18th century and is based on a manor house with a complex of buildings surrounding it used as an ageing cellar. The autochthonous Ribolla Gialla vine represents the winery's oenological vocation and only a small part of it survives within the land immediately adjacent to the main building. Around the 1970s, the potential and quality of the products were exported to international markets, thanks to the transition of the wine from the demijohn to the bottle. Today the business is thriving and expanding, with innovative projects aimed at the future and environmental sustainability, thanks to a close-knit and efficient team.
The Prepotto vineyard is the place where Volpe Pasini's Merlot 'Togliano' grapes grow and extends over approximately 10 hectares. The terrain here is hilly, suited for the production of extraordinary reds and with the exclusive presence of the Merlot grape variety. The layout of the vineyards has wide terraces reminiscent of Aztec pyramids; the microclimate is ideal with hot, sunny summers and cold, rainy winters, and there are significant temperature swings between day and night, a condition that brings out the extraordinary elegance of the Merlot grapes. Harvesting is carried out manually; in the cellar, alcoholic fermentation with selected yeasts takes place in steel tanks. It matures for some time in steel and then in the bottle for a few months.
To the eye, Volpe Pasini's Merlot 'Togliano' is an intense ruby red with brilliant reflections. The aromas released are those of ripe wild berries such as blackberry and raspberry, ripe red fruit and hints of red roses; on the palate it is elegant, fine and fruity with important tannin well integrated in the drink and a curious sip that entices cup after cup. It is a perfect match for grilled or stewed red meat dishes and first courses with important sauces; also interesting are medium-aged mixed meats and mature cow's and sheep's milk cheeses. Ideal for the family party table or for winter evenings in front of the crackling fireplace to enjoy a wine with intense flavours.
