The Negroamaro di Lizzano 'Bellicum' represents a bottle of very good taste balance produced by the Apulian De Quarto estate. Antonio De Quarto, owner of the winery, processes grapes exclusively from his own vineyards located in the municipality of Lizzano, a few kilometres from the Ionian Sea, in an area where viticulture has been practised since the times of Magna Graecia. The appellation 'Bellicum' derives from the name of the Apulian wild plum, testifying to the link between this wine and the land.
De Quarto Negroamaro di Lizzano 'Bellicum' originates from a selection of only Negroamaro grapes grown in the typically Mediterranean climate of the province of Taranto. The vines are grown in the Apulian alberello style, without herbicides and pesticides, on red soils rich in limestone. Manual harvesting takes place towards the end of September, with the bunches then transferred to the cellar for spontaneous alcoholic fermentation in stainless steel tanks in contact with the skins and at a controlled temperature for a duration of 18 days. Once the fermentation process is complete, the mass matures for several months in steel tanks until final bottling.
