Manciaciumi's 'Nube Nera' is a genuine red, the full expression of a winery that makes it its mission to recover old vineyards on Etna. The 'Nube Nera' from the Sicilian winery Manciaciumi is an artisanal label with a soaring and engaging drinkability. Like other wines produced by Diego Sciuto, the young protagonist of the Manciaciumi project, the 'Nube Nera' is the result of the vinification of grapes from a very old vineyard that the winemaker has endeavoured to recover, thanks also to the support of his two partner friends, Leonardo and Giovanni.
Manciaciumi 'Nube Nera' comes from a blend of only red grapes grown under certified organic conditions, from an old vineyard planted on soils rich in volcanic sand and located at analtitude of over 800 metres above sea level. After manual harvesting, the grapes are vinified red through spontaneous alcoholic fermentation in fibreglass vats in contact with the skins, entrusted exclusively to the yeasts present on the grapes and in the cellar environment. Invasive operations are banned throughout the process, as is the addition of additives and adjuvants.
Manciaciumi's 'Nube Nera' presents itself in the glass with a light, bright ruby-red hue. The complex aromatic bouquet is delineated by inviting aromas of violets and red fruits, including cherry, raspberry and redcurrant, adorned with hints of sweet spices such as cinnamon. On the palate, the soft tannins and balanced freshness help define a smooth and very pleasant progression, rich in fruity returns. By virtue of its surprisingly light and dynamic drinkability, this red wine can also be paired with seafood cuisine, in particular with savoury dishes such as fish soup with tomato sauce or seared tuna steak.
