NYCHTERI SIGALAS 2020 DESCRIPTION

The Nychteri by Sigalas is the white wine par excellence of Santorini, produced from overripe grapes of Assyrtiko and fermented and aged in old oak barrels for about 30 months. A white wine that combines the mineral personality of Assyrtiko, an historical grape of Santorini, with the soft elegant and persuasive notes by fermentation and refinement in barrels.

A white wine with a long aging potential which, in the tradition of Santorini, was to develop oxidation during aging so that it resembles almost Sherry. Today Domaine Sigalas has maintained the characteristics of Nychteri, giving up part of these oxidative phenomena, to get a more elegant and seductive wine that is offered in the chalice with a beautiful golden yellow and gives immediately the rich bouquet and complex where the typical nuances Assyrtiko grape citrus play with ripe yellow fruit nuances, while maintaining the minerality and the freshness that characterizes this grape.
