The EVO "Orgilla" is an organic oil from the Marche region produced by Agricola Fiorano from a mix of local cultivars, including Leccino and Frantoio. With a bright greenish color with golden reflections, it smells of vegetable notes of celery, tomato leaf, green apple, aromatic herbs and light pungent streaks of chilli. On the palate it is structured, fragrant and pleasantly bitter, with light spicy notes. We recommend a drizzle over baked fish dishes or on salads to add a touch of great personality

The 'Orgilla' EVO oil, produced by Fiorano, is an organic Extra Virgin Olive Oil from the heart of the Marche region. The Fiorano Farm was established in 1997 in the Contrada Fiorano di Cossignano, in the province of Ascoli Piceno, and cultivates olive groves, vineyards, almond groves and arable land in full respect of nature, under a certified organic farming regime and with minimal environmental impact. Thanks to a photovoltaic system, the company has been almost self-sufficient from an energy point of view since 2010. The oil is the fruit of a desire to give voice to the ancient vocation of the territory, enhancing the value of native cultivars. It is made from a blend of Leccino, Frantoio, Pendolino, Sargano and Oliva Tenera Ascolana, the latter being true rarities historically present only in the Piceno area.
"Orgilla' is an EVO oil produced in a beautiful hilly area which lies between the Adriatic Sea coastline and the foothills of the Monti Sibillini National Park. The climate is particularly suited to olive cultivation. It is mild and temperate, with good temperature ranges, due to the cool air currents that descend from the peaks of the Apennines, as opposed to gentle sea breezes. The olive grove covers 5 hectares, with southwest exposure and a planting density of 250 trees/ha. The olive trees have an average age of 30 years and have a yield of about 30 kilograms per plant. Harvesting takes place during the month of October, at the beginning of the moment when the colour of the fruit changes from green to brown. Moling takes place within 12 hours of harvesting to preserve the aromas' fragrance and keep acidity and peroxide levels low. Extraction takes place by cold pressing, at a controlled temperature of less than 27 °C, in a two-stage continuous cycle mill. Before bottling, the oil is stored in stainless steel tanks in the absence of oxygen.
Fiorano's 'Orgilla' EVO oil is bright green in colour with golden highlights. On the nose, it releases a delicate bouquet, characterised by vegetal scents of tomato leaf, artichoke, freshly cut grass, fresh almond, chicory, celery, aromas of green apple and nuances of aromatic herbs. On the palate, it is fragrant, harmonious and fruity, with a delicate structure, a perfect taste-olfactory correspondence and pleasant mellow notes. The oil is bottled after static decantation and without filtration and may therefore have slight veiling on the bottom due to the presence of microparticles of olive pulp. Its delicate flavour makes it particularly suitable for accompanying fresh salads, cooked vegetables or fish dishes.
