Its rediscovery is due to the process of enhancing native varieties and the tenacity of a few winegrowers, who have always believed in the potential of this white grape. Its floral and fruity character is enhanced by a delicate vinification process that preserves all the freshness of its fragrances. It is a perfect white wine to enjoy with hors d'oeuvres, with seafood dishes typical of Campania cuisine.
"Caiatì" is a Pallagrello Bianco from Alois, an estate that has always been committed to the recovery and valorisation of the ancient native vines of the Caserta area. The property covers some thirty hectares in the Pontelatone countryside, the cradle of viticulture, which was already highly developed here in ancient times. The Pallagrello Bianco vines are about 25 years old and are located at an altitude of 150 metres above sea level, in the Alta Campania area of the Monti Trebulani. The vines are rooted in soils of ancient volcanic origin, composed of tufaceous rocks with pozzolan and ignimbrite components. The climate is temperate, always very windy, and characterised by good temperature ranges. Harvesting takes place at the beginning of September and the best bunches are gently pressed. The must is fermented in stainless steel tanks at a controlled temperature of 13-15 °C. Subsequent ageing takes place in steel tanks for several months.
The Pallagrello Bianco 'Caiatì' wine from Alois is a perfect interpretation of the vine, vinified in purity in a manner very respectful of its varietal characteristics. A white wine to be discovered that allows one to get to know and appreciate an excellence of the Caserta area. In the glass, it is pale yellow in colour with luminous golden reflections. The olfactory profile reveals delicate floral notes, aromas of white pulp fruit, Golden apple, Williams pear, ripe citrus fruits, hints of tropical fruit of pineapple and fresh almond. The palate is harmonious, rich and broad, with ripe and intense fruit that stretches towards a balanced fresh and savoury finish.
