PEDRO XIMENEZ SOLERA 1927 ALVEAR - 37.5CL DESCRIPTION

Pedro Ximenez Solera 1927 has a very important origin. In fact, the year shown on the label is the one that marked the beginning of the Solera Method used to age this liqueur wine, made up of a multitude of different vintages. A bottle with a sweet taste, in which the sugary component, resulting from the drying of the grapes in the vineyard, is masterfully interpreted by the winery, resulting in a sip that is always satisfying. Sweet with dessert, it is perfect for pairing with panne cotta, creme caramel and fruit cakes.

The Solera 1927 Alvear is a pure Pedro Ximenez, a variety whose grapes are dried while they are still on the bunches in the vineyard, enjoying perfect sunshine. After harvesting and destemming, the grapes are softly pressed, and fermentation of the dense must is interrupted by adding alcohol to the mass. At the end of the vinification process, the wine is aged using the Solera method, dating back as far as 1927. The Solera is a type of ageing that consists of arranging the barrels in overlapping rows: starting by filling only the topmost barrels, after a year has passed, part of the contents are decanted into the barrels on the lower level, and the original ones are filled with the new wine.

Alvear's Solera 1927 moves in the glass with a dark amber colour, characterised by slight nuances reminiscent of mahogany, especially visible in the rim. The range of aromas on the nose moves on concentrated touches reminiscent of plums and a slight sensation of cocoa and chocolate. On the palate it is deep, enveloping, with a generous and sweet, well-dosed taste; it closes with fruity aromatic returns, endowed with good persistence. A label that springs from the walls of the oldest winery in all of Andalusia, Alvear, a world-famous and renowned winery that is now in its eighth generation of a family dedicated to producing wines that are the expression of a unique territory.
