This "Colle Rotondella" signed by Cantine Astroni comes from the harvesting and processing of Piedirosso, an indigenous varietal concentrated above all in the volcanic areas of the province of Naples. More precisely, the vines grow in Camaldoli and Astroni, within the Camaldoli Estate, on loamy soil, characterised by sand and tuff, located at about 300 metres above sea level. The must undergoes a pre-fermentative maceration, then ferments in steel tanks for a total of 15 days at a temperature always kept under control. The wine then continues its production process with the final ageing phase, lasting a total of four months and carried out entirely in steel on fine lees.
Cantine Astroni's Piedirosso "Colle Rotondella" reveals itself to the eye with a sharp colour reminiscent of ruby, characterised by a few flashes that veer more towards violet. Concentrated and elegant is the bouquet that asserts itself with notes of small red fruit and more mineral effluvia, which make their way from a slightly toasted background. It enters the mouth with a lightly structured sip, characterised by a dry, fresh and savoury taste, in which the tannin is barely accentuated. A territorial label, strongly Campanian, to be paired with regional recipes.
