Dario Coos' Pinot Blanc is a fine but intense white wine that spends its youth in stainless steel tanks before being bottled. Balanced and persistent, floral aromas of jasmine and acacia are perceived from the first sip, accompanied by hints of tropical fruit and yellow fruit. Goes well with all fish dishes, from hors d'oeuvres to main courses, such as a good baked fish with potatoes
Dario Coos Pinot Bianco is characterized as a bottle with a lively and refined personality, crafted in the Colli Orientali del Friuli region. The Dario Coos winery is located within the municipality of Nimis, at the northernmost edge of the Colli Orientali del Friuli denomination, close to the Slovenian border. The estate is precisely situated in the locality of Ramandolo, where the unique soil composition and the particularly favorable microclimate for viticulture contribute to the creation of wines with a unique character.
The Dario Coos Pinot Bianco is produced from 100% Pinot Bianco grapes, cultivated without the use of desiccants and chemical herbicides on the steep terraced hills of Ramandolo. Here, the vines benefit from the “ponca” soil, a type consisting of alternating layers of Eocene marl and sandstone, as well as from a microclimate influenced by light breezes and significant temperature variations between day and night. The harvest is carried out by hand, usually during the second decade of September, and the grapes undergo a delicate pressing followed by spontaneous must settling. The subsequent alcoholic fermentation takes place in temperature-controlled stainless steel tanks, with complete malolactic fermentation also occurring. The maturation phase, lasting several months on the fine lees, also takes place in stainless steel. After a brief period of bottle aging, the wine is finally ready for release to the market.
The Dario Coos Pinot Bianco is straw yellow in color with subtle greenish highlights. On the nose, it reveals delicate and immediate aromas of exotic fruits and flowers such as wisteria, jasmine, and acacia, combined with hints of apple and apricot and a fine mineral vein. The palate is intense and balanced, characterized by a fresh and silky progression, with good persistence.
