Toros' Pinot Grigio was born in the Collio Friulano area in Novali near Gorizia. The winery has a long history behind it, with family members over time passionate about viticulture and eager to enhance the beauty of the area, apt to produce excellent whites. Today, Franco is the one who runs the business: a winemaker today but a vintner of yesteryear, and he has been able to make constructive changes, modernizing production techniques and taking care of the vineyard, respecting the growth and development times of the plants and raw material. Today, work in the winery is facilitated by the entry of daughters Eva, Cristina and Erika and brother Renato, thanks to whom it is possible to continue looking to the future of the work.
Toros' Pinot Grigio vineyards are located in the municipality of Cormons in a hilly area on Italy's northeastern border with Slovenia. The sun exposure is the cost between the rows and gives excellent ripeness to the grapes at harvest time. The microclimate here is ideal: continuous ventilation, consistent temperature ranges and the Julian Prelate chain that protects the vineyards from the cold winds from the north constitute key elements for perfect plant growth conditions. The soil here consists of stratified marly stone and sandstone, eroded over time by weathering, implying the presence of nutrients and minerals for a thriving and welcoming soil. Harvesting is by hand in early September; soft lung pressing and alcoholic fermentation occurs in steel in the cellar. It is aged 7 months also in steel.
The colour of Toros' Pinot Grigio is a straw yellow with bright highlights. The aromas are reminiscent of characteristic hints of toasted hazelnuts, unripe yellow-fleshed fruit and hay; on the palate, it is persistent, structured, and elegant, with a good final freshness that beckons the drinker to drink glass after glass. In pairing, it is recommended with seasonal vegetable soups, vegetarian dishes, grilled and roasted white meats and mixed boiled meats with sauces.
