Elena Walch's Pinot Noir Reserve 'Aton' is one of the best expressions of the South Tyrolean soil. Today, her daughters Julia and Karoline have officially joined the family business, bringing new life and modernity. The work philosophy is aimed at respecting the natural growth and development phases of the plants and the raw material, and respecting the ecosystem surrounding the vineyards, in the name of enhancing the territory and native vines.
The vineyards of Elena Walch's Pinot Noir Reserve 'Aton' grow on soils predominantly composed of clay and limestone with the presence of marly stone and dolomite rock for a final product with unmistakable character. The winters are cold and snowy with sudden frosts often close to spring; the summers are hot, sunny and affected by considerable temperature fluctuations between day and night, optimal for the grapes. The altitude is about 400 metres above sea level and the exposure is south with constant sunlight and warmth. The grapes are harvested manually between the end of August and the first ten days of September. In the cellar, it is cold macerated for 5 days and fermented in steel for 15 days; this is followed by ageing in barriques for 12 months and then rests for a year in steel.
To the eye, Elena Walch's Pinot Noir Reserve 'Aton' is ruby red with intense, brilliant reflections. The aromas are reminiscent of wild berries, liquorice and tobacco with an intense spicy vein on the finish; on the palate it is inviting, juicy and elegant with mineral hints on the finish and a pleasant persistence that entices glass after glass. It goes well with local game dishes, stewed red meat cuts and first courses with elaborate sauces; perfect with mature mountain cheeses made from cow's milk. Excellent to accompany important family celebrations or anniversaries or for romantic evenings in front of the fireplace with good music in the background.
