PROSECCO ASOLO EXTRA DRY BELE CASEL DESCRIPTION

Prosecco Asolo Superiore Extra Dry from the Veneto-based winery Bele Casel is a sparkling wine that plays on the fragrance and sweetness of its aromas, characterised by a slight residual sugar that lends softness to the taste. The DOCG Asolo Prosecco, also known as Colli Asolani, was created in 2009 and emphasises the superior quality of its Proseccos. The production territory comprises a group of hills in the province of Treviso, famous for their beauty and heterogeneity, as well as for their wealth of wineries.

Asolo Bele Casel Prosecco Superiore Extra Dry is made from only Glera grapes grown in the territory of the municipality of Cornuda, on hilly terrain at an altitude of 150-200 metres above sea level. The soil consists of clayey marls with a typical red colour, while the harvest takes place in September. This is followed by white vinification through soft pressing, static decantation of the must and alcoholic fermentation in stainless steel tanks. After 5 months of rest, the sparkling wine base is then re-fermented in steel autoclaves according to the Martinotti Method, with the process lasting 30-40 days. The Prosecco is finally bottled under isobaric conditions to preserve its effervescence.

Bele Casel Asolo Prosecco Superiore Extra Dry has a straw-yellow hue with persistent bubbles. The nose expresses fragrant fruity hints of apple, pear and yellow peach, combined with floral nuances and slight hints of mango. The slight sweetness on the palate is well balanced by the marked savoury-mineral, almost salty timbre, elements that together with the pleasant freshness give rise to a well-balanced and persistent development with a nice smoothness.
