The vinification process is unique, involving the use of wood for the Chardonnay, which contributes to the final blend – where Glera is undoubtedly the protagonist – giving it a certain character and enhancing the breadth and depth of the perlage in the mouth. On the nose, an original and intense profile can be detected, with spicy and buttery notes reminiscent of the period spent in wood and on the lees. The “Cuvée del Fondatore” by Valdo is a Prosecco di Valdobbiadene Superiore Brut born from a blend where, alongside 90% Glera, there is also a small percentage of Chardonnay. The vineyards are located on soils mainly composed of clay over a subsoil of sandstone marls, at an altitude of about 250 meters above sea level. The grapes are harvested manually in the second half of September, and the berries obtained from the destemming of the clusters are softly pressed. The first fermentation takes place in steel tanks, with a period in wooden barrels for the Chardonnay; the subsequent secondary fermentation occurs in an autoclave, following the “long” Martinotti Method, with a total of 12 months on the lees. After bottling and before commercialization, the Cuvée rests in glass for another six months.
This Prosecco di Valdobbiadene Superiore Brut “Cuvée del Fondatore” Valdo presents itself with a straw yellow color, interspersed with some golden streaks; the perlage is fine-grained and of good persistence. The bouquet on the nose offers notes of well-ripened white-fleshed fruit, enriched by hints of vanilla and light touches of hazelnuts. On the palate, it is medium-bodied, velvety, and creamy, with a sip that reveals a fruity and fresh flavor. This bottle is among the most important produced by the winery, dedicated to the great Sergio Bolla, who more than anyone else believed in the potential of Venetian sparkling wines, bringing them to success already in the post-war period.
