Prosecco di Valdobbiadene Superiore Extra Brut is a Veneto bubbly that is striking for its particularly dry taste. This characteristic derives from a very precise choice made by the Col Vetoraz team, which does not add any residual sugar at the end of the vinification phase. A typically varietal bottle on the nose, in which the Glera grape, grown in the best hills of the vineyards surrounding the town of Valdobbiadene, expresses itself with a traditional profile suitable for drinking throughout the meal.
This Extra Brut is a Prosecco di Valdobbiadene Superiore that comes from the pure use of the symbolic grape variety of this appellation, Glera. The vines of this variety grow in the plots that have the best exposure around Valdobbiadene. The berries are harvested between September 20 and October 10, and once they reach the winemaking facilities at Col Vetoraz, they vinify in white, statically decanting and fermenting at a controlled temperature. The second fermentation takes place in autoclaves and last 30-40 days, following the typical production principles of the Martinotti Method. At bottling, no residual sugar is added.
Prosecco di Valdobbiadene Extra Brut Superiore Brut reveals itself to the eye with a straw-yellow, luminous colour; the perlage is fine and persistent in duration. The range of aromas on the nose develops on floral and fruity notes, with a slight reference also to citrus fruits. In the mouth, it is light-bodied and harmonious, with a dry sip resulting from the total absence of residual sugar, dominated by a nice crispness. An excellent label with which the Col Vetoraz winery interprets one of the most important appellations of the entire Veneto region with classicism.
