It is a sparkling wine produced with the Charmat Method, which enhances especially the varietal notes of the grape, emphasizing the profile of fruity fragrance and expressive immediacy.
Prosecco di Valdobbiadene Superiore Extra Dry comes from the steep hills of Valdobbiadene, where the native Glera grape variety has been grown for centuries. The mountains protect the Valdobbiadene area from cold winds from the north, and the significant temperature swings between sunny days and cool nights favor the ripening of grapes with intense aromatic profiles. The vines are trained following the cappuccina method, on calcareous clay soils particularly suited to white varieties. After classic white vinification with fermentation in temperature-controlled stainless steel tanks, the base wines mature a few months in vats before being sent to the autoclave for the second fermentation, which usually lasts about 30-40 days. After aging for a few months, the wines are ready to be bottled.
