The Prosecco di Valdobbiadene Superiore Extra Dry "EXD" sparkling wine by Duca di Dolle is a chameleon-like product that, thanks to a perfect harmony between sweetness and acidity, manages to be successful on the table on any occasion, from finger food as an aperitif to desserts at the end of the meal. A moderately intense label on the nose, where citrus notes alternate with varietal apple scents, the prelude to a subtle and persistent bubble on the palate. An extremely versatile bottle, which therefore deserves space in one's personal collection.
"EXD" is a Prosecco di Valdobbiadene Superiore Extra Dry that originates from a blend where, alongside the grape symbol of this denomination, Glera, we also find small percentages of Perera and Verdiso. The vineyards face south and are between 25 and 40 years old, and the vines grow using the double upside-down system. The bunches of grapes are harvested at the end of September, and once they reach the winemaking premises of the Duca di Dolle cellar, they are destemmed. The grapes obtained are sent to the press and the must ferments a first time in steel, then re-ferments again in autoclaves, following the production rules of the Martinotti Method.
This Valdobbiadene Prosecco di Valdobbiadene Superiore Extra Dry "EXD" Duca di Dolle announces itself in the glass with a light colour reminiscent of straw yellow; the perlage is fine and continuous. The range of aromas that envelops the nose expresses pleasant notes, highlighting hints of citrus and white-fleshed fruit. In the mouth, it is full-bodied, drinkable, with an incisive, slightly sweet sip where the sweetness is never intrusive. Versatile in the kitchen, thanks to the slight residual sugar it is perfect not only at aperitif time but also at the end of dinner, with various desserts or with a selection of dry pastries.
