Olivier Leflaive's Puligny-Montrachet Premier Cru "Les Pucelles" is a thoroughbred white, complete and transversal, a crisp expression of one of the most vocated cru of Burgundy for the production of white wines. That of the Leflaive family is a name well known to wine enthusiasts, by virtue of a wide and thick production, which includes a vin de negoce business and another, focused instead on the production from vineyards of the estate. What the wines have in common, however, is, in addition to their rigorous and extremely centered style, their genre, as the Leflaive family enjoys an undisputed ''bianchista'' reputation. In fact, the Domaine's plots are located among the best communes of white Burgundy, with a particular focus on Puligny Montrachet, Chassagne Montrachet, Saint Aubin, Chablis and Saint Romain. Premier Cru Puligny-Montrachet "Les Pucelles" is made from pure Chardonnay grapes grown in the cru of the same name located in Puligny Montrachet and from a single vineyard planted in 1955. In the vineyard, a regime of lutte raisonèe is practiced, designed to respect the vines as much as possible, and finalized by an extremely careful manual sorting of the grapes. In the cellar, after alcoholic fermentation, the wine ages for 18 months in barriques, 20% of which is new.
The wine "Les Pucelles" Premier Cru presents itself in the glass with a greenish robe that turns to golden. Deeply territorial to the nose, with the alternation of hints of lemon meringue, salted butter, ripe fruit and custard alternate. The taste reveals an important displacement, which fits perfectly between acidity and salt, and thus drawing a complete and satisfying sip.
