The Riesling made by Aimé Stentz is one of the labels in the Traditions line: a range of creations that includes the great classic varieties of Alsatian winemaking, vinified in purity as well as in blends, according to the dictates of local tradition.
Aimé Stentz makes his Riesling from grapes grown on vines that are around 40 years old, cultivated according to the rules of the organic certification obtained in 2010, on soils that are basically made up of clay and sandy components. The reference territory extends within the village of Wintzenheim, on the slopes that slope down from the Vosges towards the town of Colmar, at an altitude of around 300 metres above sea level. It is precisely the mountain massif that protects the vineyard from the cold oceanic influences of the English Channel, which benefits from a semi-continental microclimate with particularly dry and warm summers and autumns and one of the lowest rainfall rates in France. The grapes are harvested when fully ripe and pressed whole in a soft manner using a pneumatic press. Fermentation takes place in steel containers, while ageing takes place in vitrified cement vats for a period of 6 months. Once bottled, the Riesling stays for a further 2 to 6 months in the cellar.
Aimé Stentz Riesling presents itself to the eye with its typical youthful straw-yellow colour, clear and bright in appearance. The nose immediately expresses itself on tones of extreme finesse, characterised by subtle floral aromas and a pungent fruitiness of citrus peel, while the hints in the background are harbingers of a distinctive minerality, which is fully reflected on the palate. The sip is defined by an evident saline expression that recalls rock, accompanied by a marked freshness: a taut and vertical white, balanced by a vein of pulpy softness that hints at the ripeness of white-flesh fruit. Riesling that goes well with goat cheeses, poultry, raw fish such as shellfish and sushi.
