The production philosophy of this charming Georgian reality is decidedly oriented biodynamic: natural yeasts, no chemicals used, on time and the peculiarities of nature. The maceration takes place in Jars, where the wine remains at least six months in contact with the skins and stalks. This methodology explains the most of the amber color of the wine and the fascinating originality of his fragrances. This wine is unfiltered, do not worry if you find some residue in the bottle: are natural proteins and can pass the wine in decanter if you prefer to make the wine more transparent.
