ROSATO 'BAT' ABBAZIA SAN GIORGIO 2021 DESCRIPTION

Abbazia San Giorgio's Rosato 'Bat' is a Sicilian wine, born on the wonderful island of Pantelleria, considered the black volcanic cone between Sicily and Africa. Battista Belvisi and Beppe Fontana founded the winery in 2015, recovering a small estate of a few hectares, located in Khamma in the south-eastern part of the island. From that moment on, gradual and steady steps forward have been made, until they have positioned the business among the best on the Italian and foreign wine scene. Important work has been done to enhance and respect the ecosystem surrounding the vineyards: from the outset, the choice was to have an organic and then biodynamic cultivation regime, respecting the natural phases of growth and development of the raw material.

The vineyards of Abbazia San Giorgio's Rosato "Bat" are located at about 300 metres above sea level and the vines are bush-trained, a typical system used in this part of our peninsula to protect the rows from the hot sun and recently recognised as a UNESCO "intangible" heritage of humanity. Human intervention in the vineyard is reduced to a minimum and pesticides, cryptogamics and synthetic chemicals are banned in favour of integrated pest and weed control. The grapes are harvested manually in early October; the selected bunches are transported in wooden crates. In the cellar, spontaneous alcoholic fermentation starts for 15 days. It matures 8 months in steel. There is no filtration or clarification before bottling.

The colour of Abbazia San Giorgio's Rosato 'Bat' is a salmon pink with intense and brilliant reflections. The bouquet of aromas is reminiscent of ripe strawberry, redcurrant, raspberry and pomegranate in combination with spicy hints; on the palate it is easy, juicy and fruity with intense mineral hints for a curious drinkability. In pairing it is recommended with moderately mature mixed cold cuts, smoked salmon canapés with fresh creams and shellfish; also interesting with grilled fish. Perfect for outdoor picnics in spring with friends and family to enjoy a wine that is a perfect ambassador of Sicilian tradition.
