With its graceful and fragrant taste, the Rosato del Salento '12 e Mezzo' from the Varvaglione winery shows all the qualities of Negroamaro in its rosé version. The aim of the estate, founded in 1921 and today run by Cosimo Varvaglione together with his wife Maria Teresa and their children, is to enhance the heritage of Apulia's indigenous grape varieties, working the grapes in pursuit of the highest achievable quality. This is the vision behind the Rosato del Salento '12 e Mezzo', a wine that reaffirms the territory's great vocation for rosé wines, characterised by an alcoholic strength of around 12.5%, hence the name of the collection.
The '12 e Mezzo' Varvaglione Rosato del Salento is made from pure Negroamaro grapes grown in the Mediterranean climate that characterises the Salento area. In the winery, the grapes first undergo a brief cold skin maceration directly in the press, followed by cleaning of the must. The subsequent process of alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 15 °C, until an alcohol content of 12.5% is reached, at which point fermentation is halted by sudden cooling. Also in stainless steel, the wine then matures on the fine lees for several months, during which time the lees are periodically put into suspension.
Varvaglione's Rosato del Salento '12 e Mezzo' from the Apulian producer Varvaglione is pale pink in colour with brilliant violet hues. The aromatic profile is delineated by pleasant and delicate aromas of fresh fruits such as strawberry and pomegranate, enriched by floral notes of rose petals. Fresh and lively on the palate, with excellent momentum and pleasantness, endowed with a consistent fruity and floral finish.
