ROSSO '60-20-20' ZYMÉ 2020 DESCRIPTION

The Rosso "60-20-20" by Zymé is a Bordeaux blend that comes from Cabernet Sauvignon, Cabernet Franc and Merlot that is a window on the world, a flawless interpretation of a great Bordeaux Italian who comes from one of the most beautiful wineries in the Veneto. Passion for wine and respect for the earth: these are the values that animate Zymé, a winery founded by a few years, but that has been able to quickly win over critics and audiences with wines of great depth. The Rosso "60-20-20" represents the power, is the strong lines and a red wine of great character, a red wine that was born according to well-defined proportions: 60-20-20 are, in fact, the percentage of three varietals: Cabernet Sauvignon, Cabernet Franc and Merlot. Grapes harvested late as they are the last to be collected; but if the two Cabernet are manually collected and crushed in the day, the Merlot rests in the fruttaia for about 20-30 days. Winemaking in concrete with indigenous yeasts for 40 days and aging in barrels of first pass for at least 24 months.
