The Rosso Riserva Cavariola di Bruno Verdi is a red wine from the hills of Oltrepò Pavese, made from Croatina, Barbera, Uva Rara and Ughetta di Canneto grapes. The Rosso Riserva "Cavariola" from the Bruno Verdi winery is a red wine intense and structured produced in the municipality of Broni, in Oltrepò Pavese. This label is made from grapes of the varieties Croatina, predominantly, Barbera, Uva Rara and Ughetta di Canneto, from a single vineyard, cru Cavariola, whose west-facing vines, set on steep hills with a 35% gradient, are trained using the traditional espalier method with guyot pruning on soils characterized by predominantly sandy-clay soils. The winery is a family-run business, owning about 12 hectares of vineyards, now personally managed by Paolo Verdi, owner, winemaker, and artisan, who has always placed the cult of the vineyard at the top of his own scale of values, making this concept the true beating heart of his entire business.
Bruno Verdi's "Cavariola" Rosso Riserva is made from carefully selected grapes harvested by hand around the month of September. The clusters, brought to the winery, are destemmed and subjected to soft crushing of the grapes, followed by alcoholic fermentation in wooden vats of 5 to 7.5 hectoliters, with maceration on the skins, for a period ranging from 15 to 30 days. At the end of alcoholic fermentation, the wine is placed in Allier oak barrels, one-third new, where it undergoes malolactic fermentation and remains in aging for at least 24 months before being bottled.
