The Rosso 'Toseo Portofino' represents a Ligurian expression of pure artisanal charm made by winemaker Daniele Parma of the La Ricolla winery. The estate is located in the small municipality of Ne, in the hills of the Tugullio area, a territory that Daniele jealously guards following the dictates of biodynamic agriculture. When the producer founded his winery in 2004, he adopted a conventional approach, but already in his early years Daniele gradually began to abandon the use of herbicides and systemic products, converting first to organic farming and then, in 2019, to biodynamic. The appellation 'Toseo' comes from the ancient dialect name of the locality Tolceto, where the grapes come from.
Ricolla 'Toseo Portofino' Rosso consists of a blend of Ciliegiolo and Sangiovese, varieties cultivated according to the dictates of biodynamics in a plot of about 1.3 hectares in the Tolceto area. The plants have an average age of about 30 years and the harvest is carried out strictly by hand. In the cellar, the grapes are mellowed in stainless steel tanks for spontaneous alcoholic fermentation in contact with the skins for 10-14 days, followed by complete malolactic fermentation. The maturation phase, which lasts for about 10 months, also takes place in stainless steel and the wine is finally bottled without clarification.
Ricolla Rosso 'Toseo Portofino' has a beautiful intense ruby red colour. The bouquet is lively and articulated, described by intense aromas of small red fruits that combine with notes of Mediterranean herbs and flowers. The taste development is fresh, crisp and juicy, with gentle tannins that contribute to great drinkability and versatility in food and wine pairings.
