'RUGIADA DEL MATTINO' I CARPINI DESCRIPTION

Rugiada del Mattino' is a white wine that combines technique and tradition in one, giving due prominence to a Piedmontese vine that has been gaining considerable interest in recent years, not only at a regional level. Produced by the I Carpini winery, a solid production reality located in the Colli Tortonesi area that is characterised by the use of organic-olistic practices, this is a bottle that is striking for its drinkability pleasantly refreshing and mineral, ideal for accompanying various Italian recipes, from raw fish to white meat;

Rugiada del Mattino is made by the i Carpini winery from grapes grown in a single vineyard, called Eleonora, with a subsoil of clay and limestone, facing south-east. The grapes, after being harvested strictly by hand, are softly pressed and then spontaneously fermented in steel, thanks to the exclusive use of indigenous yeasts. At the moment of bottling, no clarification or filtration is carried out. Once in the glass, the wine is left to mature for a few months before release, developing a light hydrocarbon minerality that evolves over time in the bottle.

This 'Rugiada del Mattino' white wine by i Carpini presents itself to the eye with an intense straw yellow colour. The nose is dominated by mineral aromas, alternating with more fruity and floral hints. On the palate, it is light-bodied, slender and agile, characterised by a sip whose calling card is the freshness-minerality combination. A label to choose not only to increase one's cultural background in the field of oenology, with an intriguing and satisfying grape variety, but also for its extreme culinary versatility.
