Ooyama Jinhichi Shoten's White Rum 'Acou' is a pioneering product, one of the first Japanese rums. It is made from sugar cane grown and harvested by hand in the warm bay of Ibusuki, skilfully blended with local organic molasses rums. Ooyama Jinhichi Shoten Distillery's White Rum 'Acou' is the first rum ever produced in Kagoshima Prefecture, Japan, strictly from local raw materials and using artisanal processes. The appellation 'Acou' comes from the name of the sacred tree located in the Miyagahama area, where the distillery is based. In this area, back in 1875, Mr Ooyama started the distillery business after devoting himself to the sale of traditional kimonos, an art that the family still remembers today. For almost 150 years, the distillery was dedicated exclusively to the production of shochu, one of the most important liqueurs in Japanese culture, until 2019, when Ooyama Jinhichi Shoten also started producing artisanal rum and gin.
This japanese White Rum Ooyama Jinhichi Shoten 'Acou' is made from sugar cane grown locally in Ibusuki, in Kagoshima Bay. In this area, the warm and humid climate is ideal for optimal growth of the plant. Once harvested by hand, the sugar cane is pressed to obtain the sugary juice contained within. This is then sent for alcoholic fermentation and the fermented product is then subjected to a double distillation in copper stills. This first rum is blended with a second rum made from organic molasses, also locally produced, and the distillate is then diluted with water from the underground aquifer under Miyagahama. The rum is finally bottled without ageing in wood, in the white type.
Ooyama Jinhichi Shoten 'Acou' White Rum has a crystal-clear appearance. Heady aromas of ripe fruit, flowers, sweet spices and caramelised sugar emerge on the nose. The taste is soft and enveloping, of great elegance, characterised by rich fruity and floral nuances on the finish.
