Hakushika's Honjozo Yamadanishiki Tokubetsu Sake is made from the 'king' of fine sake rice, Yamadanishiki. It is grown locally in Hyogo Prefecture, near the 'sakagura' or cellar. This sake is produced using a special technique handed down from generation to generation among the 'Toji' master brewers in the Tanba region. The nose is delicate, fine, with fine floral and yeasty hints. On the palate, it surprises with its richness, ample body and silky mouthfeel, with a fresh finish and great finesse
Sake Honjozo Yamadanishiki Tokubetsu Hakushika is a sake of great cleanliness of smell and taste, made within Hyogo Prefecture by the Tatsuuma-Honke sakagura. Hakushika' is the most important brand of Tatsuuma-Honke, under which the best sake produced by this sakagura based in the city of Nishinomiya, between Osake and Kobe, in an area considered to be one of the most prestigious in the whole of Japan in terms of the art of sake brewing, is marketed. The name 'hakushika', meaning 'white deer', derives from an ancient Chinese legend that identifies the white deer as a representation of prosperity and longevity, symbolising the long tradition of the Tatsuuma-Honke sakagura and the future before it.
Yamadanishiki Tatsuuma-Honke Sake Honjozo Tokubetsu Hakushika is derived from only rice of the prized Yamadanishiki variety grown locally in Hyogo Prefecture. After harvesting, the grains are polished to a huskiness of 70%, then thoroughly washed and steamed. The water used in the brewing process is Miyamizu, which comes from the Nada area and has long been considered themost valuable water for sake brewing. This is due to its low concentration of iron and manganese, elements that usually detract from the final quality of sake. Once the fermentation process, carried out by the Koji fungus and yeast, is complete, it is finally pressed, filtered, pasteurised and bottled.
Tatsuuma-Honke's Sake Hakushika Honjozo Yamadanishiki Tokubetsu has a crystal-clear and transparent appearance. The aromatic bouquet is defined by fine floral and iodine hints that combine with delicate yeasty memories. The taste, elegant and refined, reveals a broad and silky progression, with a clean and very balanced finish.
