Through its balanced and very classy style, Sake Junmai Daiginjo Housen Kuranohana succeeds in transmitting the strong bond with the territory that characterises the production spirit of the Japanese reality Sasaki Shuzo, making it one of the most prized sakagura products. This reality is based in Yuriage, in the port city of Natori, located within the Miyagi prefecture and facing the Pacific Ocean. Among the varieties of rice used by Sasaki Shuzo, a prominent role is occupied by Kura no Hana, a rice developed at the end of the last century in Miyagi and prized for the delicate character of the sake derived from it.

Sasaki Shuzo Sake Junmai Daiginjo Kuranohana Housen is brewed solely from Kura no Hana rice grown within Miyagi Prefecture. After harvesting, the grains are polished to a degree of as much as 45%, thus in the Junmai Daiginjo category, considered the most prized in the vast world of sake. This is followed by steaming the rice and then saccharification by the Koji fungus, which is responsible for breaking down complex sugars into simple sugars that can be metabolised by the yeasts during alcoholic fermentation. The water used throughout processing then comes from underground streams fed by the Natori River, which flows right next to the sakagura.

On visual inspection, Sasaki Shuzo's Sake Junmai Daiginjo Housen Kuranohana shows a crystal-clear appearance. The aromatic bouquet reveals fascinating and refined notes of flowers and aniseed that combine with evocative memories of rice. In the mouth, it is round and elegant, of exceptional balance, with a refreshing aftertaste and a pleasant umami tone accompanying the clean, long-persistent finish.
