Sake Umeshu Tsuji Honten is a fruit sake from Okayama Prefecture, born of the addition of Ume (Japanese plum) juice to sake made from Omachi rice. The Umeshu Sake by the Tsuji Honten – Gozenshu brand is a light liqueur made from sake and Japanese plums that is appreciated for its extraordinary versatility. In Japan, Umeshu is a very popular beverage, often prepared with homemade recipes as well. In addition to being enjoyed neat or on the rocks, some of the most appreciated uses of Umeshu include mixology, particularly with cocktails such as Umeshu Soda, Umeshu Tonic, and Umeshu Sour, prepared respectively with soda, tonic water, and a combination of ingredients such as lime juice, sugar syrup, and egg white.
Tsuji Honten Umeshu Sake is produced from a combination of sake and Japanese plums, locally called "ume," sourced from Okayama Prefecture. The sake base is made from Omachi rice, polished to a polishing degree of 70%, and then subjected to various processing and fermentations to obtain a high-quality sake. At this point, the sake is infused with the plums for a suitable period of time to extract the characteristic aroma and flavor of the fruit. In addition to sake and plums, sugar and alcohol are added in the preparation of Umeshu, seeking an ideal balance between the typical acidity of plums, the softness provided by the alcohol, and the sweetness of the sugar.
Visually, Tsuji Honten's Umeshu Sake reveals an amber yellow hue. Rich and persistent aromas of honey and hazelnut describe the aromatic spectrum, accompanied by pleasant notes of plum.
