The Sauvignon di Schiopetto is a fresh, soft and pleasantly aromatic white wine from Collio that faithfully reflects the characteristic green and varietal notes of the grape. On the nose it diffuses fresh and fragrant aromas, characterized by notes of juicy citrus fruits, tropical nuances, floral hints and a typical note of tomato leaf. The Sauvignon del Pompiere by Schiopetto is a fresh and aromatic white wine from the Veneto region, faithfully expressing the characteristics of the 100% Sauvignon grape variety. Originally from the Bordeaux region, Sauvignon finds optimal soil and climate conditions in Friuli, especially in the windy hills of Collio Goriziano, with predominantly marly and clayey soils of Eocene origin. This wine, in its second vintage, represents a more immediate and simple version compared to Mario Schiopetto's classic label. Osteria ai Pompieri, the historic family restaurant, was fundamental in sparking Mario's interest in wine and determining his dedication.
Vineyard cultivation is carried out according to the Cordon spur and Guyot system, with a density of vines ensuring a yield of 50hl per hectare. After the manual harvest of the grapes in early September, soft pressing and low-temperature vinification follow for 10-12 days in stainless steel tanks to preserve the characteristic aromas. The wine then matures for 4 months in stainless steel, the protagonist material of the "Schiopetto style," capable of making the wine even more elegant and refined, and at least another 2 months in the bottle to give it softness and persistent aromaticity.
From an organoleptic point of view, the Sauvignon del Pompiere by Schiopetto presents itself with a straw-yellow color and greenish reflections, offering lively notes of kiwi, hints of elderflower and hawthorn, and fruity hints of green apple and citrus on the nose. On the palate, it is fresh, enveloping, and balanced, with a precise correspondence to the aromatic profile. This wine is recommended to pair with traditional dishes from Veneto cuisine, such as, for example, risotto di gò, a lagoon fish that pairs impeccably with this Sauvignon. With its elegant persistence of vegetal notes, this white wine proves to be an ideal companion for aperitifs or to pleasantly enrich any other convivial moment.
