Praepositus is one of the most celebrated examples of Sauvignon produced in Italy and owes its fame to the extreme elegance and minerality with which it declines the characteristics of the famous transalpine grape variety. An abbey with an almost thousand-year history that of Novacella has been able to offer itself as an interesting model, not only in terms of viticulture, but also in what concerns the cultivation of aromatic herbs and fruit that together with the sale of wine serve as sources of livelihood.
Praepositus Sauvignon white wine comes from vineyards located between 600 m and 900 m above sea level. The Praepositus line was created with the intention of creating a label that is distinctive as excellence in quality, and is therefore an expression of the best vineyards of the Abbey. The cool climate, is enlivened by frequent temperature fluctuations, and this allows for perfect aromatic ripening of Sauvignon. The soils, rich in minerals, give the wine its imprint with the contribution of considerable sapidity. After careful sorting of the bunches, the grapes are fermented in temperature-controlled stainless steel containers, where the liquid will rest for another six months before bottling.
The wine Prapeositus Abbazia di Novacella reveals itself in its straw-yellow guise, with slight greenish highlights. The nose, variegated and extremely complex, is dominated by fruit of all colors: golden apple in primis, but also more fleshy hints of yellow peach. The second act is all acted out by the intersection of mineral lashings to those of white flowers, drawing a crisp picture of great completeness. The sip is a millimetric fusion between the exuberant aromaticity of the Sauvignon, and the elegant interpretation of the winery, a combination that gives life to a wine with an international scope. To be drunk with satisfaction every day, even better when accompanied by tasty seafood risottos or delicately seasoned white meats.
