The Frizzante Ancestrale Rosé by Belgian producer Sebastian Van de Sype is an Emilian ancestral method with a lively and spirited soul, crafted according to artisanal practices. Sebastian Van de Sype's winemaking project officially took shape in 2020 on the hills of Castelvetro di Modena, a place chosen by the winemaker for his venture after over 10 years of experience as a Formula 1 engineer. In his project, based on Lambrusco di Grasparossa and vinification according to the Ancestral Method, Sebastian can boast an exceptional supporter: Frank Cornelissen, his compatriot and friend, among the foremost artisanal interpreters of Etna wines.

The Ancestrale Van de Sype Rosé Frizzante originates from a blend of Lambrusco di Grasparossa from Castelvetro (90%) and Trebbiano Modenese (10%) grapes, sourced from 20-year-old vines cultivated under certified organic conditions. After hand harvesting, the grapes are gently whole-cluster pressed, without any maceration, and the resulting must undergoes spontaneous alcoholic fermentation in stainless steel tanks using pied de cuve. When the fermentation process is not yet fully completed, the liquid is bottled to develop spontaneous effervescence in the bottle according to the Ancestral Method. Aging on lees continues for about 12 months, after which disgorging is performed without subsequent dosage. Throughout the entire process, the wine undergoes no clarification or filtration.

A lively cherry blossom pink hue characterizes Sebastian Van de Sype's Frizzante Ancestrale Rosé visually, while on the nose it reveals intriguing aromas of wild strawberry, plum, and hibiscus, with hints of yeast. The taste is juicy, nimble, and rustic, characterized by lively freshness and a fragrant finish.
