Carl Koch Silvaner Tafelstein Dienheimer is an extraordinarily fresh white wine produced in Rhine Hesse according to sustainable viticulture. The Carl Koch estate was founded in 1855 and is one of the oldest wineries in the Rheinessen wine region, Rheinhessen in Italian. Specialising in the production of white wines, this winery produces fuller, more structured expressions than the rest of Germany, while retaining the distinctive freshness of the terroir. The grapes destined for this label come precisely from the Kandelweg cru, located in the Dienheimer Tafelstein area.
The Silvaner Tafelstein Dienheimer from the German winery Carl Koch is a 100% Sylvaner from vines planted in 1984 on soils consisting of loess and a substratum of limestone marl. The vines, which are organically certified, are well protected from the winds. In the cellar, the grapes are first destemmed and then undergo 24 hours of pre-fermentation skin maceration, followed by soft pressing and natural static decantation of the must, without the use of additives and excluding the use of filtration. Alcoholic fermentation takes place in stainless steel tanks with the sole intervention of indigenous yeasts, without malolactic fermentation. Maturation always takes place in stainless steel on the yeasts for 5 months and the mass is finally bottled without clarification, filtration or stabilisation.
Dienheimer Tafelstein Silvaner from Carl Koch is straw yellow in colour with greenish flashes. The nose expresses notes of citrus peel, white-fleshed fruit and aromatic herbs, supported by pleasant hints of hazelnut and toasted almond. The taste development is fresh and balanced, characterised by an excellent mineral vein and a lingering finish on citrus sensations.
