Domini Veneti's 'Castellaro' is a Soave Classico produced in the Valpolicella region of Veneto. After ageing half in French oak barriques and half in stainless steel tanks, the two parts are blended to produce a fruity, floral, complex white wine with a lingering finish. The Soave Classico Superiore 'Castellaro' by the extensive wine-producing estate Domini Veneti is a pure Garganega that stands out for its fruity and delicately toasted aromas. The Castellaro cru, located in Monteforte d'Alpone, on the northern side of the classic Soave area, covers a total area of nearly 30 hectares of vineyards, with a portion allocated to Domini Veneti. It is a volcanic cone whose name has two possible origins: one linked to an ancient ruined castle and the other to the "castellarium," the peripheral enclosure that characterized a construction with palisades.
The 'Castellaro' Domini Veneti Soave Classico Superiore is made from 100% Garganega grapes grown on volcanic soils with a moderately fine texture and basaltic subsoil. After the harvest, the grapes are softly pressed, and the resulting must is conveyed into stainless steel tanks for alcoholic fermentation. This is followed by a maturation phase of several months, half in French oak barriques and the other half in stainless steel tanks.
Visually, the Soave Classico Superiore Domini Veneti 'Castellaro' displays an intense straw-yellow color. The aromatic profile is defined by fruity and floral hints of peach, lemon, hawthorn, and jasmine, accompanied by notes of almond and fine woods. On the palate, it offers a complex and well-balanced sip between the soft component and full freshness, with a savory-mineral development of long persistence. This Soave is characterized by excellent versatility in food and wine pairing, complementing both seafood and land dishes, including cheeses, pasta dishes with shellfish, fish mains, and chicken and other white meat dishes.
