Domini Veneti's Soave Classico 'Coste' is a pure expression of Garganega that tells the story of its volcanic soils through a distinct minerality. Domini Veneti's Soave Classico 'Coste' is a pure Garganega with a strong mineral character, a consequence of the volcanic nature of the soils on which the grapes grow. The cultivation system that characterises the vineyards from which the grapes come is that of the pergola, a traditional form of cultivation widespread in the area. In particular, the advantages of the Veronese pergola include the shading of the bunches, which is favourable in counteracting the phenomena of burnt grapes, as well as the high accumulation of aromatic precursors in the grapes. In addition, being a high training form, the pergola counteracts the risk of spring frost for the buds, a phenomenon that is becoming increasingly widespread due to the warming of the climate that in many years brings forward the time of budding.
'Coste' Domini Veneti Soave Classico is a 100% Garganega from vineyards cultivated with the Veronese pergola system on north-facing slopes of volcanic origin. The name 'Coste' derives precisely from this position of the pergolas on steep hillsides. In the cellar, the hand-picked and selected bunches of grapes are skilfully vinified in white by means of soft pressing and alcoholic fermentation of the must in temperature-controlled stainless steel tanks. After maturing for a few months, again in stainless steel, the wine is finally bottled.
On visual examination, Soave Classico Domini Veneti 'Coste' shows a brilliant straw yellow colour. The nose denotes fresh aromas of citrus, yellow peach, white flowers and aromatic herbs that blend with a mineral stamp of flint. In the mouth, it is taut and slender thanks to the teasing freshness and incisive sapid-mineral trail, elements that are accompanied by returns of citrus and bitter almond in a pleasantly balanced finish.
