'SOFFOCONE DI VINCIGLIATA' BIBI GRAETZ 2021 DESCRIPTION

Bibi Graetz's "Soffocone di Vincigliata" is a red wine to drink with great pleasure, never proving tiring for those who find it on the table, but on the contrary always proving to be punctual and precise. It is undoubtedly an intense and full-bodied product, in which Sangiovese is the undisputed protagonist of the final cut with a personality that comes alive in a perfectly enveloping sip. A label that should be paired with great red meats and game dishes.

This "Soffocone di Vincigliata" red comes from a blend developed by Bibi Graetz winery where, alongside a 90 percent Sangiovese, we also find small percentages of Canaiolo and Colorino, indigenous Tuscan grape varieties. The vines of these three varieties are about 40 years old and grow with the guyot training system, sinking their roots into soils mainly rich in clay and marl. Fermentation of the must takes place in steel tanks for about 10 days, a period in which several manual punching-downs follow one another. Final aging lasts 15 months and takes place in French oak barrels. At the end of maturation, bottling and marketing operations are carried out.

Bibi Graetz "Soffocone di Vincigliata" develops in the glass with a ruby red color, characterized by brilliant hues. Rich and concentrated the nose, where fruit announces itself first with intense notes, then gives way to floral, spicy sensations and nuances that recall herbs. Full-bodied, it envelops the palate with a full and rounded sip thanks to a finely worked tannic texture; it has a taste that, on the finish, recalls a slightly toasted flavor. A Tuscan red that, over the years, has been able to win an important place at the critical level.
