SPARKLING WINE BRUT DI ASPRINIO 'TRENTA PIOLI' SALVATORE MARTUSCIELLO DESCRIPTION

The Salvatore Martusciello winery's 'Trentapioli' Asprinio d'Aversa Spumante Brut is a Martinotti Method rich in history and tradition, an expression of one of the most characteristic training systems on the world wine-growing scene. In fact, Asprinio vines are traditionally trained using the ancient alberata system, with the vines growing high up on trees of different species, especially poplars. The vines therefore reach a height of 10-15 metres, requiring the use of special ladders for cultivation and harvesting operations. The appellation 'Trentapioli' refers precisely to the ladder used, which is 15 metres high and consists of around 30 rungs.

The Spumante Brut Salvatore Martusciello Asprinio d'Aversa 'Trentapioli' comes from only Asprinio grapes cultivated with the ancient tree system in the Agro Aversano. Harvesting is done by hand with the aid of very tall ladders and is followed by soft pressing of the bunches. The must thus obtained undergoes alcoholic fermentation in stainless steel tanks, with the sparkling wine base thus obtained then being subjected to frothing in autoclaves according to the Martinotti Method, otherwise known as the Charmat Method. The sparkling wine remains for a long period of at least 180 days to mature on the lees in the autoclave, acquiring a certain structure and complexity.

On visual inspection, Salvatore Martusciello's Asprinio d'Aversa 'Trentapioli' Spumante Brut expresses a straw-yellow colour tending towards golden with persistent effervescence. The aromatic bouquet carries pleasant notes of citrus, white fruit and aromatic herbs, combined with hints of almond and flowers. The palate stands out for its freshness and liveliness, as well as for the savoury tone that accompanies the tantalising citrine persistence on the finish.
