The Piedmontese producer Paolo Ferri introduces the Metodo Classico Blanc de Noir Zero Pas Dosé ‘Preja Gran Cuvée 40 Mesi’, a sparkling wine with a clean and refined style, one of the flagship labels of this sparkling wine producer in Alto Piemonte. Generally, although it is not an official designation, in the sparkling wine world, the term “Gran Cuvée” indicates a superior quality sparkling wine, made from the best available grapes for the particular type of sparkling wine. In this case, it is a Blanc de Noir made from a single black grape variety.

The Metodo Classico ‘Preja Gran Cuvée 40 Mesi’ Spumante Blanc de Noir Zero Pas Dosé by Paolo Ferri originates from red grapes grown in a cool climate characterized by significant temperature variations between day and night on morainic and alluvial soils. After careful selection, the grapes are vinified in white through gentle pressing, followed by the alcoholic fermentation of the must in stainless steel tanks. Once ready, the base sparkling wine is bottled with the addition of tirage syrup for secondary fermentation in the bottle according to the Metodo Classico, with at least 40 months of aging on the lees in glass. After this period, the sparkling wine undergoes disgorgement and is topped up with the same wine, without any dosage.

The Metodo Classico Blanc de Noir Zero Pas Dosé ‘Preja Gran Cuvée 40 Mesi’ by Paolo Ferri has a bright golden yellow appearance with elegant and persistent perlage. The aromatic profile is defined by engaging scents of orange, wisteria, and exotic fruits, enriched by notes of almond, butter, and nutmeg that add depth and breadth. The taste development is dry and clean, characterized by a crisp freshness that precedes a long and refined persistent finish.
