Andreas Mann of Weingut Mann introduces Spatburgunder 'Calx,' a red wine from Germany that stands out for its graceful and spontaneous personality. Spӓtburgunder is the name by which Pinot Noir is called in Germany and Austria. The German term "spӓt" means "late," referring to its characteristic late ripening, while the word "burgunder" refers to the Pinot family, which is precisely native to Burgundy. It is one of the most important grape varieties in Germany being the third largest producer of this grape in the world. The expression "calx," which gives the label its name, refers to the limestone soils on which the grapes grow.

Spatburgunder Weingut Mann 'Calx' is made from only Pinot Noir grapes grown in accordance with the principles of organic and biodynamic agriculture on soils particularly rich in limestone. Once ripe, the grapes are hand-picked and transferred to the winery, where they are mellowed in steel tanks for spontaneous alcoholic fermentation operated by indigenous yeasts only. Once the fermentation process is complete, the mass is placed in large used oak barrels for aging for 24 months, after which the wine is bottled without prior clarification, filtration and sulfitation.

In the glass, the 'Calx' Spatburgunder Weingut Mann 'Calx' exhibits a pale ruby-red hue. The olfactory range opens on scents of red fruits such as cherry and currant, followed by perceptions of blackberry and spices such as cinnamon and tobacco. Round and soft, fresh and graceful sip, with a silky tannic texture that accompanies the lingering, savory mineral finish. A Pinot Noir to pair with not overly savory preparations such as traditional königsberger klopse, veal meatballs seasoned with a sauce made of butter, flour and vegetable broth.
