The Sparkling Brut "Giorgi 1870" by Giorgi is a clear example of how the classic method can achieve excellence in the territory of Oltrepò Pavese. Giorgi is a company located in the historic territory of Canneto Pavese; a winery that sees its origin traced back to 1875, when the first generation of the family Giorgi started to producer wine for the families of the neighboring countries. The real turning there has been since 1970 when Gianfranco and Antonio have built a modern winery, now reaching excellence and helping to bring prestige in Italy and in the world at the beautiful territory of Oltrepò Pavese. Beyond the river Po, where the climate is dry in winter and wet and gently warm in the summer, we find the vineyards of Giorgi: old family vineyards exploited to produce great wines, such as Sparkling Brut "Giorgi 1870" that comes from 100% Pinot Noir grapes that come from carefully selected areas of Montecalvo Versiggia, Santa Maria della Versa, and Rocca de Giorgi, all grown at a height of between 250 and 400 meters above sea level. After harvesting, made at the end of August, the grapes are gently pressed to extract the juice and let it ferment and then with the help of selected yeasts in stainless steel tanks at controlled temperature. The wine is bottled the following spring, while the wine continues its aging in bottle for at least 36 months. It just this period that generates the typical ones and pleasant hints of yeast and bread crust accompanied by aromas of citrus and pineapple. In the mouth it stands for softness and a fine, but dynamic perlage.
