Casa Caterina's Spumante Metodo Classico '60' Blanc de Blancs is an iconic wine for the Italian artisanal movement. The winery is the symbol of a Franciacorta that approximates its own production ideal to that of the small récoltant-manipulants of the Champagne region in France, with the desire to move away from the canonical schemes of average Italian production to generate wines of great complexity and structure, destined to meet with the favour of time after long evolution. Credit for this goes to Aurelio Del Bono, an uncompromising winemaker from a farming family whose origins in Monticelli Brusati date back as far as the 12th century. From the very first years of production, his founding choices have decreed a decisive shift towards an unconventional production philosophy that goes to the essence of terroir-based viticulture and the Classic Method.
The Spumante Metodo Classico "60" Blanc de Blancs is a peculiar bubble, in that Casa Caterina is the only winery in the area that can boast the global presence of only plants cultivated with the Guyot and spurred cordon systems, as tradition dictates, within vineyards with the best altimetric positions and exposures in the entire eastern Franciacorta region. Out of this unique natural heritage comes a Brut Nature made using very strict methods that do not allow any compromise.
The "60" Blanc de Blancs Spumante Metodo Classico Casa Caterina is produced following a manual handling of the entire vinification process, with traditional 'à la volée' disgorging. On each bottle, the dates of harvest, draught and disgorgement are written solely by hand on the label, including an indication of the serial number in relation to the total 6000 bottles produced. These are the premises for a Brut of distinctive class, an absolute symbol of Casa Caterina's style, capable of demonstrating how the correct triangulation between territorial vocation, rigorous productive interpretation and the action of time can result in the most intimate root of the Champenoise Method itself.
