The "Dady" is a Blanc de Blancs Classic Method sparkling wine with a gritty and elegant profile, belonging to the line of cuvée with reserve wines of Alessandra Divella. Made with Chardonnay grapes only, it is spontaneously vinified in barrique and aged for 42 months on the lees, revealing a straight, taut, structured and deep profile, with toasted, citrus and dried fruit notes.

Divella’s Spumante Metodo Classico Dosaggio Zero Blanc de Blancs "Dady" is a bubble that blends complexity, richness and energy, as well as one of the most brilliant expressions of Franciacorta. Alessandra Divella is together with a few other names in the Italian sparkling wine class, characterized by an extraordinary expressive spontaneity and the result of a work that does not include shortcuts or abuses. Just 2 hectares of vineyards, obviously used for Chardonnay and Pinot Noir and cultivated without any chemical or synthetic substance can alter the natural vitality of the vineyard, and vinified separately with microvinification. In the cellar we proceed with spontaneous fermentation of the base wines and long aging on the lees, in order to enrich the liquids, which however maintain a stylistic mark devoted to the compactness and gustatory tension. The Classic Zero Blanc de Blancs "Dady" Dosage Method is made from 100% Chardonnay grapes, from vineyards cultivated near Gussago, a town located in the heart of Franciacorta. After the first pressing of the grapes, the spontaneous alcoholic fermentation of the base wines takes place in barriques of second and third passage. Refermentation in bottle followed by long aging of 42 months on the lees, and after disgorgement the wine is filled with only a part of Chardonnay reserve, therefore it is not dosed.
Blanc de Blancs "Dady" Dosage Zero is presented in the glass with a luminous golden color, and an extremely fine and persistent perlage. The aroma is deep and three-dimensional, revealing a greedy meatiness made of references to salted butter, coffee and toast, followed by the lashing of minerals and dried fruit. Filling mouthfeel, creamy and very long, capable of taking possession of the palate dragging itself into a memorable gustatory persistence. Meteora.
