The Classical Method sparkling wine 'Athmosphères' from the French artisanal producer Jo Landron is a bubbly with a fine, pure and sleek style. This sparkling wine is made from a blend of Folle Blanche, Pinot Noir and Chardonnay, with the former variety capable of imparting freshness, the Pinot Noir sought after for its structure and the Chardonnay capable of contributing to the finesse of the cuvée.
Jo Landron Metodo Classico Spumante 'Athmosphères' consists of a blend of Folle Blanche (36%), Pinot Noir (33%) and Chardonnay (31%) grapes, varieties bred according to the dictates of organic and biodynamic agriculture, both certified. The vines, aged between 10 and 40 years, stand on gravelly soils in the case of Pinot Noir and on sandy-clay soils in the case of Folle Blanche and Chardonnay. Harvesting is carried out entirely by hand and is followed by soft pressing of the whole bunches, with the must thus obtained undergoing 2-3 weeks of spontaneous alcoholic fermentation in stainless steel tanks using only indigenous yeasts. After a few months of maturation, the wine then undergoes bottle fermentation according to the Metodo Classico, associated with 12-24 months of ageing on the lees. The sparkling wine finally undergoes dégorgement and the subsequent light dosage.
