Spumante Metodo Classico Brut Nature from the Piedmontese winery Olim Bauda is a bubbly with a balanced and refined character, the result of a classic blend of Pinot Noir and Chardonnay grapes. Located in the Nizza Monferrato area, Tenuta Olim Bauda is a true landmark for the area, having established itself over the decades for the high quality of its wines. Today the winery is led by Dino, Diana and Gianni Bertolino, brothers who represent the third oenological generation at the helm of the estate.
Metodo Classico Spumante Olim Bauda Brut Nature is made from a blend of Pinot Noir (60%) and Chardonnay (40%), varieties cultivated on soils composed mainly of limestone and clayey-sandy marl of marine origin. Agronomic management is based on the principles of organic farming and the harvest is carried out entirely by hand in boxes with careful selection of the grapes. Only the first-pressing must obtained from the soft pressing of the bunches is then conveyed into small wooden barrels for alcoholic fermentation, while the subsequent frothing takes place in the bottle according to the Metodo Classico, associated with 42 months of ageing on the lees before disgorging. The wine is finally marketed without any dosage as Brut Nature.

The aromatic bouquet is composed of inviting floral sensations of jasmine that meet fresh citrus notes of orange and lemon peel, enhanced by sweet notes of brioche and small pastries.
