The Metodo Classico 'Cuvée Zero' sparkling wine from Piedmont's Cascina Chicco is a dry and balanced bubbly of irresistible pleasantness. Cascina Chicco is a winery in the Roero area that is the protagonist of a production based on the oenological excellence of Basso Piemonte, including Roero, Roero Arneis, Barolo, Barbera d'Alba and Nebbiolo d'Alba. Alongside these wines, strongly linked to the oenological history of the area, the estate is also dedicated to the production of Metodo Classico sparkling wines, exploiting both the clayey-calcareous component of the soils and the cool microclimate of the vineyards, characterised by significant temperature excursions between day and night.

The 'Cuvée Zero' Cascina Chicco Metodo Classico Spumante originates from a single important black grape variety vinified in white. The grapes grow on soils rich in clay and limestone and are harvested at an early stage, between mid and late August, in order to preserve the organic acid content of the berries, which is fundamental for sparkling wine production. In the winery, the grapes are softly pressed directly, with the must obtained being conveyed into stainless steel tanks for alcoholic fermentation. Foaming takes place in the bottle according to the Metodo Classico, combined with a prolonged period of 36 months on the lees at a controlled temperature. This is followed by disgorgement and subsequent topping up with the same wine, without any dosage.

The 'Cuvée Zero' Metodo Classico sparkling wine from Cascina Chicco has a straw yellow colour with greenish highlights and a very fine effervescence. Fragrant aromas of citrus and white-fleshed fruit present the nose together with pleasant hints of bread crust and almond. The taste is fine and delicate, fresh and elegant, with an excellent citrus and mineral persistence on the finish.
