The label is part of the trend of sparkling wine production with indigenous grapes, which has been crossing the entire peninsula for several years now. Erbaluce di Caluso sparkling wine is a Metodo Classico made by a family business in Canavese. Ilaria Salvetti manages an estate of a few hectares following the principles of organic farming. Production begins with a selection of grapes from vineyards grown in the hilly area of the municipality of Caluso at an altitude of 350 meters above sea level. The cool, breezy climate and the morainic soils, rich in pebbles, are particularly suited to the erbaluce grape variety. The harvest takes place slightly early, around the beginning of September, to preserve the freshness needed for the sparkling wine bases. The clusters are gently pressed, and the flower must ferment spontaneously in temperature-controlled steel tanks with only indigenous yeasts. The second fermentation takes place in the bottle, with ageing sur lattes of about 30 months before dégorgement. Bottles are filled with the same wine without any sugar dosage.
Ilaria Salvetti's Erbaluce di Caluso Spumante is a Metodo Classico that brings out the best finesse of the native Piedmontese grape variety. It is a small artisanal production made with passion, following every step of the process with maniacal care. In the glass, it has a brilliant straw yellow colour, crossed by a very fine and persistent perlage. It opens on the nose with delicate aromas of white flowers, hints of lime zest, aromas of white-fleshed fruit, notes of bread crust and dried fruit. The sip is limpid and taut, with fragrant aromas and a very fresh finish.
