SPUMANTE METODO CLASSICO DOSAGGIO ZERO 'NINÌ' DIVELLA DESCRIPTION

The "Ninì" Divella is a Classic Method fruit of a harmonious blend of Pinot Noir and Chardonnay grapes, of great thickness and deep expressiveness. A niche sparkling wine, belonging to the line of cuvées made with reserve wines, born from the dreams become reality of Alessandra Divella, a young female face recently overlooking the area of Franciacorta. Very few annual specimens of these fragrant and enveloping bubbles that are worth grabbing before the spotlight lights go up to Gussago, a small town in the province of Brescia, where the Divella winery has taken home since 2005.

Divella’s "Ninì" is an innovative and artisanal expression that can surprise everyone. A blend of Pinot Noir and Chardonnay grapes, it stands out for its authenticity and naturalness, thanks to the spontaneous fermentations activated by only yeasts present on the skins, the low use of sulphites and the courageous desire never to add sugar dosages after disgorgement. After adding 25% of reserve wines, it is aged on the lees for about 42 months. It refuses the use of any correction before bottling and is presented in its true and rigorously made-up.

Divella’s Zero Dosage "Ninì" has a crystalline straw yellow and the fine elegance of the perlage rises gently from the bottom to the top of the glass. The first approach to the glass smells of freshly baked bread and small pastry and extends over notes of ripe fruit with yellow pulp. Once in the mouth it is enveloping and crunchy, tastes of custard, anise and honey, without ever being sweet and leaving a memory of graceful and graceful finesse. This complex sparkling wine, versatile and never equal to itself, has all the credentials to evolve with rhythm and precision over time, but if the idea of letting it get dusty in the cellar does not go too well, it is perfect to be drunk even now.
