In Emilia-Romagna, precisely within the municipality of Campegine, between Parma and Reggio-Emilia, originates the Spumante Rosé Metodo Classico 'Nina' from the Ferretti winery, a researched and original artisanal bubbly made from the rare local Fortana grape variety. This blackberry variety was once known as Uva d'Oro, an unusual adjective when referring to a black grape variety. The etymology of this ancient name follows two hypotheses: one refers to Fortana's supposed place of origin, the Côte d'Or in Burgundy, and the other is linked to the characteristic abundant production that made it 'golden grapes', a source of sustenance for farmers.
Ferretti's Spumante 'Nina' Metodo Classico Rosé is produced from pure Fortana grapes grown in accordance with the dictates of organic farming. After harvesting, the grapes are transferred to the cellar, where they undergo an 8-hour maceration on the skins and spontaneous fermentation without temperature control. Once the sparkling wine base is ready, it is drawn off for bottle fermentation according to the Metodo Classico, with at least 6 months of maturation on the lees. During processing, the liquid is not subjected to clarification processes and only low doses of sulphites are added.
The Metodo Classico Rosé Spumante Ferretti 'Nina' is dark pink with fine, delicate effervescence. On the nose are suggestions of blueberry, raspberry, strawberry and flowers such as rose, combined with perceptions of yeast and bread crust. The taste is agile and fruity, fresh and lively, with a slight tannic sensation enhanced by the bubbles. Nina' is a unique sparkling wine to be enhanced with traditional Emilian hors d'oeuvres such as fried gnocco and charcuterie board.
