Ruiz de Cardenas' Spumante Extra Brut Blanc de Blancs "Armonia" is a Metodo Classico made in Oltrepò Pavese from pure Chardonnay grapes. The Burgundy grape variety has been present for centuries in the Pavese hills, where it has found the climate and soils very suitable for producing quality wines, particularly for making bases for sparkling wine. Ageing for 3 years on yeasts allows the Chardonnay to express a mature bouquet with floral and fruity notes, enriched by aromatic evolutions that veer toward elegant sensations of bread crust and pastry.
Ruiz de Cardenas' Extra Brut Blanc de Blancs "Armonia" is a sparkling wine that comes from one of the Italian areas historically best suited for the production of Metodo Classico. The Ruiz de Cardenas estate covers a total of 5 hectares on soils mainly composed of limestone-clay marls. Since its foundation, which dates back to the late 1970s, Ruiz de Cardenas decided to devote itself exclusively to the cultivation of the two international varieties that were best adapted to the terroir: Chardonnay and Pinot Noir. Starting with two noble grape varieties, production has been directed toward quality wines, with a special focus on sparkling wines. The Classic Method is declined in various labels with different cuvées and ageing times. The choice of a Blanc de Blancs fits into the perspective of giving voice to the various types of Metodo Classico, always in the sign of excellence.
Ruiz de Cardenas' Metodo Classico Extra Brut Blanc de Blancs "Armonia" is a very pleasant drinking sparkling wine to be enjoyed as an aperitif or to accompany seafood appetizers. It is made from pure Chardonnay grapes harvested slightly in advance. At the end of soft pressing, the classic white vinification is carried out to produce the sparkling wine bases. The second fermentation takes place in the bottle according to the classic method, with a stay sur lattes of at least 36 months. The appearance is light straw yellow, with a perlage of beautiful finesse and persistence. The bouquet is characterized by floral aromas, white fruit aromas, notes of pastry, bread crust and vanilla berries. The sip is savoury, with fragrant and satisfying fruit, leading toward a fresh and mineral finish.
