The black berry varieties of Apulia have proven over time that they can produce great rosé wines, thanks in part to an area where sea breezes from the Adriatic and Ionian Seas play a key role in mitigating the summer heat and contributing to the savoury character of these wines. Among these, Susumaniello has been gaining increasing popularity in recent years, thanks in part to the work of a vast array of producers intent on exploiting its interesting varietal characteristics.
Susumaniello del Salento Varvaglione Rosato is made from pure Susumaniello grapes grown on clay and limestone soils in the Salento region, characterised by a warm Mediterranean climate lapped by constant sea breezes. In the winery, the bunches first undergo a brief cryomaceration, aimed at enhancing the aromatic component of the grapes and extracting the desired amount of colour, followed by soft pressing. The must thus obtained is then conveyed into stainless steel tanks for alcoholic fermentation at a controlled temperature of 16-18°C. Still in stainless steel, on the fine lees, the wine remains to refine for a few months until final bottling and marketing.
